Coarsely grate the cucumber into a sieve that has been placed over a bowl.
Add a couple of pinches of salt and then squeeze as much water as you can, using your hands, through the sieve into the bowl.
Tip the water away, put the cucumber and yoghurt into the bowl.
Place the garlic and a good pinch of salt into a pestle and mortar and grind until you have a paste.
Put it into the bowl with the cucumber.
Mix in the dried mint and red wine vinegar and stir together.
Enjoy together with the lamb and feta burgers or a nice greek salad.
